Chinese Mock Duck with Kumquats
Chinese Mock Duck with Kumquats
Serves 6
Ingredients:
Mock duck
Tangerine juice
Sugar
Tamari
Vinegar
Cornstarch
1 tablespoon canola oil
2 large leeks, white parts thinly sliced
3 tablespoons minced peeled fresh ginger
12 kumquats, thinly sliced
Directions:
1. Drain and squeeze the marinade from the mock duck and slice it into 1/2-inch strips.
2. In a medium bowl, mix together the tangerine juice, sugar, tamari, vinegar and cornstarch.
3. Heat a wok over high heat, add the oil and swirl. Stir-fry the mock duck until lightly browned. Add the leeks and ginger and stir until softened, about 3 minutes. Stir in the juice mixture until the sauce is thick and glossy. Add the kumquats, stir to mix and serve immediately.
