Pork Roast with Rosemary

Pork Roast with Rosemary

Ingredients:
2 1/2 pounds pork loin roast (2 1/2 to 3-pounds)
2 tablespoons chopped fresh rosemary leaves
4 cloves garlic -- finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon margarine or butter
1 small onion -- chopped (about 1/4 cup)
2 tablespoons olive or vegetable oil

Directions:
Heat oven to 350º. Trim fat from pork roast. Mix rosemary and garlic. Make
8 to 10 deep cuts about 2 inches apart in pork with sharp knife. Insert
small amounts of garlic mixture in cuts. Sprinkle pork with salt and
pepper.
Melt margarine in shallow roasting pan in oven; sprinkle with onion. Place
pork in pan; drizzle with oil. Insert meat thermometer so that tip is in
center of thickest part of pork and does not touch fat. Roast uncovered 1
3/4 to 2 hours or until thermometer reads 160º. Let stand 15 minutes
before slicing.
