Banana Pudding
Banana Pudding
Ingredients:
2 cups light whipped topping, thawed
3 bananas, sliced
6 ounces vanilla wafers, plus more for garnish
Sweetened condensed milk
Skim milk
Vanilla pudding mix
Directions:
1. In a large bowl, mix the sweetened condensed milk with the skim milk. Add the pudding mix and beat well. Chill in the refrigerator for 5 minutes.
2. Fold in the thawed whipped topping.
3. Spread 1 cup of the pudding on the bottom of a large serving dish. Top with one-third of the bananas, one-third of the wafers, and one-third of the pudding. Repeat the layering twice, ending with the pudding. Garnish with a few crushed vanilla wafers on top. Chill thoroughly and keep refrigerated until ready to serve. Makes twelve 1/2-cup servings Note: The pudding part of this recipe can be made a day in advance. Just assemble with the bananas and cookies shortly before serving. Also, the bananas can be stirred into the pudding, if you prefer, instead of layered on top of the pudding.
