Stewed Okra
Stewed Okra
Ingredients:
1 tablespoon extra-virgin olive oil
1 pound okra, sliced lengthwise
¼ cup Chicken Stock
1 cup diced tomato
¼ cup chopped yellow onion
¼ cup cored, seeded, and chopped tricolor bell pepper
1 tablespoon chopped garlic
½ cup tomato paste
2 bay leaves
½ teaspoon crushed red pepper
1 teaspoon unsalted butter
Directions:
Kosher salt and freshly ground black pepper to taste
1. Coat the bottom of a medium saucepan with olive oil and set it over medium heat
for about 1 minute.
2. Add the okra, chicken stock, tomato, onion, bell pepper, garlic, tomato paste, bay
leaves, and crushed red pepper. Bring the mixture to a boil, reduce the heat to a
simmer, and cook for about 20 minutes, or until the vegetables are tender. If the
mixture seems a little dry, add a bit more chicken stock.
3. Remove the bay leaves, transfer the okra to a serving bowl, and add the butter.
Season with salt and pepper.
ZUCCHINI AND SQUASH FRITTERS
Kids of all ages love eating this with fried fish or fried chicken, but it also makes a
great side dish for everyone. If you don’t have blackening seasoning, you can
substitute ½ teaspoon paprika.
