Salmon Pinwheels With Garlic Herb Cream Cheese

Ingredients:
8 ounces cream cheese, softened
2 tablespoons minced shallot
2 tablespoons minced garlic
1 teaspoon stemmed, chopped fresh dill
1 teaspoon stemmed, chopped fresh parsley
2 tablespoons chopped fresh chives
2 pounds smoked salmon fillets, skinless and boneless

Directions:
Salt and freshly ground black pepper to taste
1 lemon, cut into wedges
1. In a small bowl, combine the cream cheese, shallot, garlic, dill, parsley, and chives.
2. Spread each piece of smoked salmon with a layer of the seasoned cream cheese.
Starting at one end, roll each salmon strip up tightly so that it looks like a pinwheel.
Secure each pinwheel with a wooden toothpick.
3. Place the pinwheels in a single layer on a large platter and freeze them for 30
minutes. Remove the toothpicks from the pinwheels. Squeeze some fresh lemon juice
over the pinwheels and arrange them on a serving platter.
COCONUT AND CORN SALAD
This side dish is a traditional Caribbean salad, and it’s good with chicken or fish.
Broiling the corn for just a minute or so keeps it nice and crunchy. Don’t use
sweetened shredded coconut in this dish. Find coconut flakes in a gourmet shop or
make your own by grating fresh coconut on a Microplane grater.
