Simple Vinaigrette
Simple Vinaigrette
Ingredients:
1 cup extra-virgin olive oil
¼ cup Champagne vinegar
2 garlic cloves, peeled
1 shallot, peeled and trimmed
1 tablespoon honey
2 teaspoons fresh cilantro leaves, stemmed
1 teaspoon chopped fresh tarragon
Directions:
Kosher salt and freshly ground black pepper to taste
1. In an electric blender, combine the olive oil, vinegar, garlic, shallot, honey,
cilantro, and tarragon. Season with a little salt and pepper.
2. Blend the vinaigrette until it is well mixed and thoroughly emulsified. Transfer it to
a container with a tightly fitting lid, cover, and refrigerate.
TROPICAL FRUIT RELISH
Serve this colorful, healthy relish with your favorite protein or as a snack. It’s
especially good with fish. You’ll note that the instructions call for the mint to be cut
into chiffonade. In French, this word means “made of rags,” but in cooking, it means
when vegetables are cut into very thin strips or shreds (see Some Useful Cooking
Terms).
