Cucumber Mint Lemonade
Cucumber Mint Lemonade
Ingredients:
1 cup freshly squeezed lemon juice
1 sprig fresh mint, stemmed

on the counter with the palm of your hand. This will break
up some of the membranes of the fruit. cut and squeeze the
lemon as hard as you can to extract the juice.

Quinoa Tabouli Salad
Tabouli is a Lebanese parsley salad traditionally made with bulgur or cracked wheat. This version uses qui-
noa, which is a pantry staple you may already have on hand. Because this salad uses a lot of fresh herbs,
measurements are not a science—use your (or your toddler’s) taste buds to determine if you should use more
or less of any ingredient.
8 seRvings 1. In a small saucepan, bring the water to a boil. Remove
from heat. Add the quinoa. Cover and set aside until
