Broccoli Feta Omelet
Broccoli Feta Omelet
Ingredients:
1 cup chopped broccoli
2 large eggs, whisked
1 tablespoon reduced-fat Feta cheese, crumbled
1/4 teaspoon dried dill
Directions:
Low-cal cooking spray
1 slice rye bread, toasted
Method:
1. Gently heat a nonstick skillet over medium heat and with the low-cal cooking spray.
Add the broccoli, and cook for 3 minutes.
2. Mix the eggs, Feta and dill in a bowl, whisk and then pour into the pan.
3. Cook for 3-4 minutes then fold the omelet in half with a spatula and cook for 2 more
minutes or until ready. Serve with the rye toast.
