Apricot Florentines
Apricot Florentines
Makes about 40
Ingredients:
Unsalted butter
Brown sugar
All-purpose flour
Almonds
Dried apricots
Semi-sweet chocolate chips
Directions:
1. Finely chop the dry apricots.
2. Cream butter and sugar in a bowl till just combined, stir in sifted flour then almonds and apricots. Drop 1/2 tsp.
3. Of mix onto greased oven trays; allow room for spreading.
4. It is best to bake about six at a time.
5. Bake in a moderate oven for about 5 min or possibly till golden.
6. Remove from oven, loosen with spatula then push each florentine into a round shape while still warm. Lift florentines onto a wire rack to cold.
7. Heat the dark chocolate.
8. Spread chocolate on flat side of each florentine and run a fork through chocolate to give a decorative effect. Allow chocolate to set.
9. Store in airtight container in refrigerator.
10. Great with after dinner coffee.
