Crimson Beet Salad
2 enormous beets, washed and stems lower off
1 cup carrots, peeled and cooked
1 tbsp cilantro, chopped
1 tbsp diced onion
2 tbsp mild mayonnaise
salt and pepper
Guidelines:
Boil beets inside water until eventually tender, over 50 minutes. Peel and lower into little 1/2″ cubes. Cook carrots till soft and slice into chunk measurement cubes. Merge diced onion, carrots, beets, mayonnaise, cilantro, salt and pepper.
