Amazing Leftover Chicken and Rice
Ingredients:
rice, white, long-grain, regular, unenriched, cooked without salt
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
shortening, vegetable, household, composite
cheese, parmesan, hard
milk, fluid, 1% fat, without added vitamin a and vitamin d
salad dressing, mayonnaise, regular
cheese, parmesan, hard
cheese, mozzarella, low sodium
Directions:
Spread rice in bottom of 2.5-3 quart casserole dish.
Mix chicken meat with vegetables, spread on top of rice.
Whisk cream cheese, milk, mayonnaise and parmesan (may need to microwave for 20-30 seconds to soften) and pour over the chicken and vegetables.
Sprinkle mozzarella on top.
Bake at 350 for 20 minutes, broil for the last 3 min to brown on top.
