Brown Rice Seafood Salad Supreme Recipe
Ingredients:
crustaceans, shrimp, raw (not previously frozen)
mollusks, scallop, (bay and sea), cooked, steamed
rice, white, long-grain, regular, unenriched, cooked without salt
spices, pepper, red or cayenne
peas, green, frozen, unprepared
seeds, sunflower seed kernels, dried
raisins, seeded
cheese, parmesan, hard
Directions:
In bowl, combine all ingredients except dressing and greens.
Pour dressing over all and toss to blend.
Cover and chill at least 1 hour, to blend flavors.
To serve, spoon onto crisp greens.
Makes 4-6 servings.
Dressing
In medium bowl, combine 1 c. plain yogurt, 1/2 C. minced seeded cucumber, 1/4 c. minced green onion, 3 Tbsp.
lemon juice, 2 Tbsp.
light soy sauce and a generous dash of lemon pepper.
Blend well.
