Tunisian veggies

Ingredients:
1 enormous aubergine, finely diced
4 tablespoons olive oil
1 massive onion, finely chopped
2 garlic cloves, beaten
1 pink pepper, seeded and diced
4 medium courgettes, diced
450g/1lb ripe tomatoes, chopped
2 tablespoons tomato purée
2 teaspoons chilli powder pinch of sugar
salt and recently floor black pepper

Directions:
First, put the aubergine in just a colander, sprinkle liberally with salt and protect with a plate or saucer. Put a major body weight upon final, then go away for 30 minutes.
Then, rinse the aubergine underneath chilly operating water, then drain carefully. Warm the oil within a hefty flameproof casserole dish, increase the aubergine and onion, and cook carefully, stirring regularly, till softened.
Then, incorporate the garlic, pepper, courgettes and tomatoes. Stir properly to incorporate, then pour within 300ml/10fl oz water and provide to the boil, stirring. Eradicate the warm, then increase the tomato purée, chilli powder and sugar. Year with salt and pepper.
Finally, include and simmer carefully for 30 minutes, stirring at times and introducing further more water if the blend results in being dry. Flavor and alter the seasoning, ahead of serving incredibly hot. greens & vegetarian.
