Duck vindaloo
Ingredients:
700g/11â„2lb boneless duck breasts
6 dried pink chillies, seeded and chopped
150ml/5fl oz distilled malt vinegar
6 garlic cloves, chopped
2cm/1in just piece of refreshing root ginger, grated
1 teaspoon beaten mustard seeds
1 tablespoon flooring coriander
1 tablespoon floor cumin
1 teaspoon flooring turmeric
1 tablespoon vegetable oil
1 teaspoon salt
1 tablespoon comfortable brown sugar
Directions:
First, lower the duck breasts diagonally into 2cm/1in just thick slices, and put them inside of a shallow non-reactive dish.
Then, put the chillies, vinegar, garlic, ginger and mustard seeds in just a blender or foods processor, and purée to a tender paste. Stir the flooring coriander, cumin and turmeric into the paste.
Then, pour this spice blend in excess of the duck slices, and combine right up until they are frivolously included. Go over and go away to marinate for 3 several hours at house temperature or right away within just the fridge.
