Lamb & anchovies with thyme

Ingredients:
1 teaspoon olive oil
15g/1⁄2oz butter
600g/1lb 5oz lamb shoulder or leg, reduce into 2.5cm/1within chunks
4 garlic cloves, peeled still remaining entire
3 sprigs of fresh new thyme, stalks eradicated
6 anchovy fillets inside oil, tired
150ml/5fl oz purple wine
150ml/5fl oz vegetable stock
1 teaspoon granulated sugar

Directions:
