Zucchini Crisp
Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, granulated
spices, cinnamon, ground
margarine, regular, 80% fat, composite, stick, without salt
squash, summer, zucchini, includes skin, raw
lemon juice, raw
spices, nutmeg, ground
Directions:
Preheat oven to 375.
For crumb mix: Mix flour, 1 cup sugar, 1 tsp cinnamon and margarine in bowl.
Mix until crumbly.
Pat 1/2 of mix in bottom of 9x13 baking pan.
Bake 15 minutes.
For Filling: In pan on stove cook zucchini and lemon juice until tender.
Stir in 1 cup sugar, 1 tsp cinnamon and nutmeg.
Cook about 5 minutes more.
Spread filling over cooked crust.
Spread remaining crust over filling.
Bake 20-30 minutes until done.
