Date Cherry Protein Energy Balls

Ingredients:
water, bottled, generic
cherries, sweet, raw
nuts, walnuts, english
beverages, protein powder whey based
sweetener, syrup, agave
vanilla extract
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)

Directions:
Line a baking sheet with parchment paper.
Make sure to soak the dates and cherries as detailed above.
This way they will soften and the energy balls will be moist.
Once soaked, drain and set aside.
Using a powerful blender, pulse nuts until roughly chopped.
Be careful not to turn them into a liquid.
Transfer to a bowl.
Process the soaked (and drained) dates and cherries for 1 minute.
Combine date cherry mixture with chopped walnuts.
Add protein powder, agave nectar, vanilla extract and coconut oil.
Mix well and form a ball from the dough.
Using a small ice-cream scoop, scoop out balls from the dough.
Then roll them by hand, toss to coat them in the shredded coconut and place on the parchment paper lined tray.
Chill for 10 minutes.
Store in an airtight container in the fridge.
