Vegetable minestrone
Ingredients:
pinch of saffron strands
1 onion, chopped
1 leek, sliced
1 celery adhere, sliced
2 carrots, diced
3 garlic cloves, beaten
600ml/1pt chicken stock
850g/13â„4lb canned chopped tomatoes
50g/2oz frozen peas
50g/2oz soup pasta
1 teaspoon caster sugar salt and recently flooring
black pepper
Directions:
First, soak the saffron strands inside of 1 tablespoon boiling water. Depart to stand for 10 minutes.
Then, put the onion, leek, celery, carrots and garlic inside a massive pan. Include the stock, deliver to the boil, deal with and simmer for over 10 minutes.
Then, increase the tomatoes, the saffron and its soaking liquid and the peas. Provide back again to the boil and incorporate the pasta. Simmer for 10 minutes right up until the pasta is al dente.
Finally, sprinkle in just the sugar, and year with salt and pepper. Stir during and provide warm. 1 onion, diced.
