Greek Yogurt Popsicles
Ingredients:
plums, raw
oil, olive, salad or cooking
sugars, granulated
yogurt, greek, plain, nonfat
sweetener, syrup, agave
Directions:
Preheat oven to 400 degrees F. Place fruit on a small sheet pan lined with parchment paper or a silicone mat.
Drizzle oil and sugar over the fruit, and toss to combine.
Roast for 20-25 minutes, just until the juices oozing from the fruit start to thicken.
Watch carefully or it will burn.
Let cool completely.
Next, in a small bowl, stir together the Greek yogurt and agave nectar.
Taste, and add additional agave if you wish.
In a popsicle mold, layer pieces of roasted fruit with the yogurt mixture.
Follow your popsicle manufacturers directions for freeze time.
