Mel's Buckwheat Pancakes

Ingredients:
leavening agents, yeast, baker's, active dry
water, bottled, generic
wheat flour, white, all-purpose, unenriched
wheat flour, white, all-purpose, unenriched
salt, table
molasses
butter, without salt
leavening agents, baking soda

Directions:
The night before:.
Sift together the flours and salt.
Stir in the dissolved yeast and cold water.
Beat vigorously until smooth.
Cover and refrigerate overnight.
In the morning:.
Dissolve the soda in the hot water and add along with the molasses and melted butter.
Let stand at room temperature for 30 minutes.
Ladle onto a hot griddle and cook as you would any other pancakes.
