Yield: 6 lb 12 oz (3 kg)
Ingredients:
- 6 lb (2.75 kg) Lean beef, ideally chuck or shank, effectively trimmed
- 2 fl oz (60 mL) Vegetable oil
- 1 oz (30 g) Garlic, chopped great
- 5 oz (140 g) Chili powder
- 11�"2 tbsp (22 mL) Floor cumin
- 11�"2 tbsp (22 mL) Dried oregano
- 1�?"2 tsp (5�?"10 mL) Cayenne
- 2 qt (2 L) Brown stock or beef broth
- 2 oz (60 g) Cornmeal or masa harina
- 4 fl oz (120 mL) cold water
- to taste Salt
Directions:
1. First, slash the beef into 1-in. (2.5-cm) cubes.
2. Next, inside a brazier, brown the beef inside the vegetable oil about higher warm. Brown a minimal at a season consequently as not to overcrowd the pan.
3. Then, increase the garlic, chili powder, cumin, oregano, and cayenne to the beef more than gentle heat. Stir and cook a pair minutes, until the spices are aromatic.
4. Then, incorporate the stock.
5. Then, degrease the cooking liquid cautiously.
6. Then, incorporate the cornmeal or masa harina with the cold water to create a delicate paste.
7. Then, stir the cornmeal combination into the beef mix.
8. Then, simmer 30 minutes to thicken the cooking liquid.
9. Finally, year to taste with salt.
