Pistachio Chia Seed Pudding

Ingredients:
water, bottled, generic
sugars, granulated
nuts, pistachio nuts, raw
beverages, almond milk, unsweetened, shelf stable
yogurt, greek, plain, nonfat
seeds, chia seeds, dried

Directions:
In a small saucepan, heat water to a boil.
Add sugar, stirring constantly to dissolve.
Reduce heat to medium and cook for 2-3 minutes, stirring constantly.
Add in ground pistachios and remove from heat.
Pour sugar pistachio mixture into a glass container, then whisk in remaining ingredients.
Cover container and refrigerate overnight, stirring every hour for the first 3 hours.
To serve, scoop pudding into serving glasses and top with additional crushed pistachios, if desired.
