Spicy Black Bean Soup

Yield: 6 qt (6 L)

Ingredients:
- 2 lb (1 kg) Black turtle beans
- 11�"2 fl oz (50 mL) Olive oil
- 8 oz (250 g) Onions, tiny cube
- 4 Garlic cloves, chopped
- 2 oz (60 g) Jalapeño or other fresh green chile, chopped
- 4 tbsp (60 mL) Chili powder
- 11�"2 tsp (7 mL) Floor cumin
- 11�"2 tsp (7 mL) Floor coriander
- 1 Bay leaf
- 5 qt (5 L) White stock, vegetable stock, or water
- 1 lb (500 g) Tomatoes (canned), fatigued and chopped
- to taste Salt
- to taste Warm pepper sauce
Garnish:
- 8 oz (250 g) Avocado, medium cube
- 8 oz (250 g) Tomato, medium cube

Directions:
1. First, soak the beans right away in cold water.
2. Next, heat the olive oil inside a weighty soup pot earlier mentioned delicate heat.
3. Then, incorporate the onions, garlic, and jalapeño. Cook over very low heat until finally nearly smooth.
