Nuernberg Red Pepper Salad
Ingredients:
1 large red bell pepper, 2 tbsp white vinegar, 1 cup water, 1/2 tsp salt, 1 tsp sugar, 1 tsp olive oil, pinch of black pepper, optional corn.
Directions:
Cut the pepper into thin strips. In a pot, bring water, salt, sugar, and vinegar to a boil. Add the pepper strips and cook for 60 seconds until slightly softened. Drain the water and let the peppers cool. Toss with olive oil and a pinch of black pepper. Add corn if desired.
