Dijon Roasted Potato Salad
Ingredients:
potatoes, raw, skin
oil, olive, salad or cooking
salt, table
spices, pepper, black
spices, garlic powder
mustard, prepared, yellow
vinegar, red wine
onions, spring or scallions (includes tops and bulb), raw
bacon, meatless
Directions:
Preheat oven to 400 degrees.
Wash and dice potatoes into 1 1/2-inch cubes.
Place in large bowl.
Drizzle with olive oil and season with salt and pepper.
Toss in garlic and mix well.
Place potatoes in baking dish and bake for 18-25 minutes, or until fork tender.
Let potatoes cool 8-10 minutes.
In a large bowl, mix mustard, vinegar and green onions.
Stir in potatoes and coat evenly.
Sprinkle bacon on top to garnish.
Serve chilled or at room temperature.
