Ingredients:
2 teaspoons vegetable oil, 1/2 red bell pepper (seeded and chopped), 1/2 green bell pepper (seeded and chopped), 1/2 yellow bell pepper (seeded and chopped), 1/2 red onion (chopped), 1 teaspoon chili powder, 1 teaspoon oregano leaves, 1 ripe but not too soft mango (peeled, seeded and chopped), 1 tablespoon chopped cilantro, Juice of 1 lime, 1 serrano or jalapeno chile (minced, or some beaten red pepper flakes to taste), Flour tortillas (Great to use 2 or 3 different colors/flavors)
