Goat Cheese Potato Cakes With Smoked Salmon
Ingredients:
potatoes, raw, skin
milk, fluid, 1% fat, without added vitamin a and vitamin d
cheese, goat, soft type
fish, salmon, atlantic, wild, raw
dill weed, fresh
spices, pepper, black
butter, without salt
Directions:
In a medium saucepan, combine potatoes and milk.
Bring to a boil over medium high heat and cook, stirring, until smooth, about 3 minutes.
Off heat, beat in goat cheese, smoked salmon, dill and pepper.
In a large skillet, melt butter.
Shape potato mixture into 6 patties 1/2 inch thick.
Cook over medium-low, turning once, until golden brown on both sides, about 6 minutes total.
Serve hot.
