Tabouli Loaded Tomatoes

Ingredients:
1 cup bulgur wheat, 2 cups distilled water, 1/2 cup minced fresh parsley, 1 tbsp Bragg Liquid Aminos, 2 chopped large tomatoes, 1/2 cup chopped scallions, 1 tbsp extra virgin olive oil, 2 tbsp minced fresh mint, 4 large tomatoes

Directions:
Soak bulgur in distilled water for 1 hour. Drain and pat dry. Mix with remaining ingredients except the 4 tomatoes. Refrigerate for at least 1 hour. Core the tomatoes and scoop out enough pulp to make a well. Fill with the tabouli mixture. Serve on lettuce.
