Pumpkin Spice-Krispie-Treats
Ingredients:
butter, without salt
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
pumpkin, raw
pumpkin, raw
vanilla extract
pumpkin, raw
salt, table
rice, white, long-grain, regular, unenriched, cooked without salt
Directions:
1.
Grease an 8x11 rectangular baking dish.
2.
In a nonstick saucepan, melt butter and coconut oil together over medium-low heat.
3.
Add the pumpkin puree and stir together with a silicone spatula until mixed well.
4.
Fold in the pumpkin spice marshmallows, stirring constantly until almost completely melted.
5.
Stir in the vanilla, pumpkin pie spice, and salt, then remove from heat.
6.
Allow the marshmallow mixture to cool about 10 minutes.
(Be patient, otherwise you will get soggy pumpkin spice-krispie treats!)
7.
Once cooled, add in the rice krispies and stir until evenly coated and press into baking dish.
8.
Place in fridge for about 10 minutes to set.
Note: These are best when enjoyed the same or next day!
