Ingredients:
1 cup rice, 2 cups cooked lima beans, 1 cup sliced carrots, 1/2 cup fresh mushrooms, 1 tsp curry powder, 2 vegetable bouillon cubes, 1 cup green peas, 1/2 cup fresh cauliflower (sliced), 1 cup chopped broccoli, 1 California avocado
Directions:
Combine rice, lima beans, carrots, mushrooms, curry, and bouillon with 3 cups of water in a 2-quart saucepan. Simmer for 35 minutes. Add peas, cauliflower, and broccoli; cook for 10 more minutes. Spoon into a serving dish. Arrange sliced avocado in a spoke pattern over the top. Makes 6 servings.
