Beets Glazed with Orange Vinaigrette
Ingredients:
beets, raw
cornstarch
orange juice, raw
vinegar, balsamic
marmalade, orange
spices, pepper, black
Directions:
Steam the beets for 35 minutes.
Allow to cool slightly, trim the ends and rub off the skin (it will slip right off).
If the beets are two hot skin them under running cold water.
Quarter the beets and set aside.
Dissolve cornstarch and orange juice in a small saucepan over medium heat.
Add the balsamic vinegar, orange marmalade and black pepper.
Stir constantly until the mixture reaches a boil and simmer for one minutes.
Add the beets and gently toss in the glace and serve.
