Tequila Corn and Black Bean Salsa
Ingredients:
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
corn, sweet, white, raw
beans, snap, green, raw
spices, coriander seed
alcoholic beverage, tequila sunrise, canned
Directions:
Heat coconut oil in a small skillet.
Add corn to skillet and cook for 2 minutes, then add black beans.
Stir beans and corn and cook for 1 minute.
Add cilantro and tequila and cook until the liquid has reduced by half.
Serve warm with your favorite tacos.
