Mini Chocolate Chip Blondies

Ingredients:
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
butter, without salt
sugars, brown
egg substitute, powder
vanilla extract
spartan, real semi-sweet chocolate baking chips,

Directions:
Preheat oven to 375 degrees F. Generously spray mini muffin tin or paper muffin cups with nonstick cooking spray.
In a small bowl, mix flour, baking powder and salt; stir; set aside.
Melt butter in a medium saucepan over low heat.
Remove from heat and stir in brown sugar.
Let cool slightly, then stir in egg and vanilla until smooth.
Stir in flour mixture, then chocolate chips.
Portion out about 2 tablespoonfuls of batter into each muffin cup and smooth tops with a small spatula or back of spoon.
Bake until just set, 10 minutes.
Let blondies cool completely on a wire rack before removing from pan.
