Zucchini Muffins

Ingredients:
egg substitute, powder
vanilla extract
spices, cinnamon, ground
spices, nutmeg, ground
wheat flour, white, all-purpose, unenriched
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
squash, summer, zucchini, includes skin, raw
sugars, granulated
leavening agents, baking soda
salt, table
leavening agents, baking powder, double-acting, sodium aluminum sulfate

Directions:
Mix egg beaters and vanilla, beat until well blended.
Add Cinnamon, nutmeg, flour, oil, zucchini to egg mixture and beat well.
Add sugar, baking soda, salt and baking powder, blend well.
Bake at 350 for 15 to 20 minutes.
Makes 30 muggins.
