Cream of Zucchini Soup
Ingredients:
onions, raw
butter, without salt
squash, summer, zucchini, includes skin, raw
soup, chicken broth or bouillon, dry
spices, pepper, black
spices, nutmeg, ground
salt, table
spices, pepper, red or cayenne
cream, whipped, cream topping, pressurized
cheese, cheddar
Directions:
Cook onion in butter in a large pan over medium-low heat until soft and transparent, but not browned.
Wash and chop zucchini.
Add to the onion along with chicken broth.
Bring to a boil.
Simmer for 15 minutes or until zucchini is tender.
Add seasonings.
Puree mixture in blender until smooth.
(I like to use a hand blender.
Less mess!)
Add cream; adjust seasonings to taste.
Reheat but do not boil.
Serve hot, garnished with grated cheddar cheese.
