Giant Apple Cookie
Ingredients:
apples, raw, with skin
apple juice, canned or bottled, unsweetened, without added ascorbic acid
lemon juice, raw
wheat flour, white, all-purpose, unenriched
sugars, granulated
sugars, brown
salt, table
spices, cinnamon, ground
leavening agents, baking soda
butter, without salt
egg substitute, powder
vanilla extract
nuts, walnuts, english
raisins, seeded
Directions:
In a skillet, combine apples, apple juice lemon juice.
Cook for 5 minutes, stirring twice.
Increase to high and boil for 10 minutes.
Cover and remove from heat.
Cool completely.
Preheat oven to 350F (180C).
Line a 12 1/2 inch pizza pan with foil, leaving an overhang all around the edges.
Grease and flour the foil.
Set aside.
Combine the sugars, flour, salt, cinnamon and butter until it is the texture of coarse oatmeal.
Stir in egg and vanilla until they are just blended.
Add apple mixture, walnuts and raisins.
Turn mixture into prepared pan.
Bake until brown, about 30 minutes.
