Vickys Rice Crumb, Gluten-Free Breadcrumb Substitute
Ingredients:
rice, white, long-grain, regular, unenriched, cooked without salt
rice, white, long-grain, regular, unenriched, cooked without salt
Directions:
Cook your rice by packet instruction in a large pan of boiling water.
The crumbs will keep well so don't be afraid to make more than you need
*165g / 1 cup of dry brown rice will make enough crumbs to coat 3lbs of meat/poultry.
Likewise 150g / 1 cup dry long grain white is enough for the same
Preheat your oven to gas 1/2 (half) / 120C / 250F and when the rice is cooked, spread it in a single layer onto a baking tray
Bake for 20 minutes or so until dried then let cool
Put the cooled rice into a blender or coffee grinder and grind it into a fine crumb consistency
Store in a glass jar with a lid in a cool dark place or in the fridge
Use in place of breadcrumbs in any recipe requiring them such as meatloaf, breaded fish fillets or chicken strips, stuffed mushrooms, a crust for a roast, stuffing etc
