Island Blackberry Cobbler
Ingredients:
blackberries, raw
sugars, granulated
margarine, regular, 80% fat, composite, stick, without salt
salt, table
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
milk, fluid, 1% fat, without added vitamin a and vitamin d
sugars, granulated
cornstarch
water, bottled, generic
Directions:
Spread the berries evenly in a 9x13" baking dish.
In a large mixing bowl cream together sugar and softened margarine.
Add salt, flour and baking powder alternately with milk.
Drop this batter by spoonfuls over the berries.
Mix together 1 cup sugar and cornstarch and sprinkle over the batter.
Pour boiling water evenly over all.
Bake at 375* for 45-60 minutes, or until top is light brown and berry juice is starting to set.
Serve cobbler at room temperature.
