Vegetable Cheese Soup
Ingredients:
onions, raw
butter, without salt
wheat flour, white, all-purpose, unenriched
milk, fluid, 1% fat, without added vitamin a and vitamin d
soup, chicken broth or bouillon, dry
shortening, vegetable, household, composite
cheese, cheddar
cheese, parmesan, hard
Directions:
In a large saucepan, saute onion in butter until tender.
Stir in the flour until blended.
Gradually add milk.
Bring to a boil; cook and stir for 2 minutes or until thickened.
Stir in the broth and vegetables.
Reduce heat; cover and simmer for 15-20 minutes until vegetables are crisp-tender.
Stir in cheddar cheese and cheese sauce, cook until heated through and cheese is melted.
