Thai Ginger Soup
Ingredients:
milk, fluid, 1% fat, without added vitamin a and vitamin d
water, bottled, generic
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
ginger root, raw
sauce, fish, ready-to-serve
lime juice, raw
onions, spring or scallions (includes tops and bulb), raw
spices, coriander seed
Directions:
Pour the coconut milk and water into a saucepan, and bring to a boil.
Add the chicken strips, and reduce heat to medium.
Simmer for about 3 minutes, just until the chicken is cooked through.
Stir in the ginger, fish sauce and lime juice.
Sprinkle in the green onions and cilantro, and serve.
