Cornmeal and Spice-Crusted Scallops
Ingredients:
cornmeal, degermed, unenriched, yellow
spices, coriander seed
spices, garlic powder
spices, onion powder
salt, table
spices, pepper, black
mollusks, scallop, (bay and sea), cooked, steamed
oil, olive, salad or cooking
butter, without salt
Directions:
1.
Combine first 6 ingredients in a shallow dish.
Dredge both sides of scallops in cornmeal mixture.2.
Heat olive oil and butter in a large skillet over medium-high heat.
Add scallops to pan, and cook 3 minutes.
Carefully turn over; cook 1 minute or until done.
