Spinach with Thai Peanut Sauce
Ingredients:
spinach, raw
oil, corn, peanut, and olive
oil, corn, peanut, and olive
spices, pepper, red or cayenne
Directions:
In a medium-sized covered sauce pan, place 1/2 inch of water, bring to a boil and add fresh spinach leaves.
Cover, and steam for 2 minutes until wilted.
Drain into a colander and press as much liquid as possible out with a large spoon.
Arrange on a serving plate and cover with peanut sauce and sprinkle with chopped peanuts and red pepper flakes.
