Bechamel Sauce (Emeril) Recipe

Ingredients:
oil, olive, salad or cooking
wheat flour, white, all-purpose, unenriched
milk, buttermilk, fluid, cultured, lowfat
salt, table
spices, pepper, black
spices, nutmeg, ground

Directions:
In a saucepan combine oil and flour, stirring it to a smooth paste.
Cook over low heat, stirring constantly, 4 min, without letting the roux brown.
Gradually add in lowfat milk, whisking constantly, and season to taste with salt, pepper and nutmeg.
Cook for 5 min, stirring constantly.
If sauce has any lumps, strain it before using.
This recipe yields about 4 c. of sauce.
