Cranberry Pistachio Granola Bites
Ingredients:
oats
cranberries, dried, sweetened
nuts, pistachio nuts, raw
nuts, hazelnuts or filberts
honey
seeds, chia seeds, dried
Directions:
Note that the dough requires at least 1 hour of inactive refrigeration time.
In a large bowl, combine oats, dried cranberries, pistachios, hazelnuts, honey and chia seeds.
Refrigerate about 12 hours, or until mixture is firm.
Using a small spoon or scoop, roll into balls.
Enjoy!
Notes: 1.
If you find the mixture too dry, add a bit more honey to keep the bites sticking together.

The granola bites keep best in the refrigerator in an airtight container for up to two weeks.
