Cinnamon Roasted Pork Tenderloin
Ingredients:
water, bottled, generic
salt, table
pork, fresh, loin, tenderloin, separable lean only, raw
spices, cinnamon, ground
spices, paprika
salt, table
spices, pepper, black
spices, cumin seed
oil, olive, salad or cooking
honey
Directions:
Dissolve the salt in the water.
Add the tenderloin, and brine for one hour in the refrigerator.
Remove the tenderloin and pat dry.
Mix the next seven ingredients in a small bowl to make a wet rub.
Apply this rub to all areas of the tenderloin, place in a plastic bag, and let sit in the refrigerator for 1/2 hour to 12 hours.
Preheat the oven to 400 degrees.
Roast the tenderloin in the oven for 20-25 minutes.
Let stand for 5-10 mintues before slicing.
