Mini Pommes Anna
Ingredients:
potatoes, raw, skin
butter, without salt
salt, table
Directions:
Preheat oven to 325 degrees F. Lightly grease or butter a 6-count muffin tin.
Wash and peel potatoes.
Slice potatoes as thin as you can with a knife or use a vegetable peeler to get paper thin slices.
Place sliced potatoes in a bowl and toss with melted butter.
Start layering slices in a circular pattern in each muffin well.
Every couple layers, sprinkle with salt and pepper.
Continue until wells are filled to the top.
Cover with foil and bake for 20 minutes.
Remove foil and bake for another 15 minutes until edges start to turn golden brown.
To remove, cover the top with foil and turn the pan upside down onto foil.Transfer released mini Pommes Anna to platter and serve.
