Spiced Oat Granola with Cranberries

Ingredients:
honey
oil, olive, salad or cooking
vanilla extract
nuts, almonds

seeds, sunflower seed kernels, dried

spices, cinnamon, ground
salt, table
cranberries, dried, sweetened

Directions:
Preheat the oven to 180 degrees C/350 degrees F.
Take a large saucepan and heat the honey and vegetable oil slowly, until it becomes runny.
Remove from heat and stir in the vanilla extract, the nuts, seeds, oats, cinnamon and salt.
The cranberries are added after baking.
Stir well until everything is covered in the honey mixture.
Take a large rimmed baking tray that youve covered with a sheet of parchment and spread out the granola mixture.
Bake this in the oven for about 35 minutes, stirring every ten minutes until the granola is golden.
Remove from the oven and set aside to cool.
Dont worry if the granola isnt crunchy yet, because that happens when the granola cools down.
After cooling, stir in the cranberries and store the granola in an airtight container.
It stays fresh for about 3 weeks.
This recipe will make about 900g/4 cups of granola.
