Carrot, Almond and Raisin Energy Bites
Ingredients:
oats
nuts, almonds
carrots, raw
raisins, seeded
seeds, flaxseed
peanut butter, smooth style, without salt
honey
Directions:
Combine oats, almonds, shredded carrots (I use a potato peeler to shred them), raisins and flaxseed in a medium-sized mixing bowl.
Add peanut butter and honey and stir to coat evenly.
Refrigerate for 1 hour.
Shape into 1-inch balls.
(This yielded me about 20.)
Store in the refrigerator.
