Madras Curry Popcorn

Ingredients:
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
snacks, popcorn, air-popped (unsalted)
lime juice, raw
sugars, brown
spices, curry powder
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
salt, table

Directions:
Add coconut oil and a few popcorn kernels to a large stock pot.
Cover and heat over moderate heat until kernels begin to pop.
Then add the remaining kernels, cover and continue to cook, shaking pot occasionally.
Continue to cook over medium heat until popping stops.
Remove from heat.
Mix together lime zest, brown sugar, curry powder, coconut and salt in a small bowl.
Toss with popcorn to combine.
