KENYAN GITHERI
1 tablespoon (15 mL) of vegetable oil
1 higher onion, chopped
3 garlic cloves, minced
1 tablespoon (15 mL) of curry powder
A 28-ounce (796 mL) can of diced or chopped tomatoes
4 cups (1 L) of refreshing or frozen corn
A 14-ounce (398 mL) can of any cooked beans, tired and rinsed
½ teaspoon (2 mL) of salt
Loads of recently flooring pepper
A heavy bunch of kale, trimmed and chopped
Splash the oil into a medium saucepan above medium-large warm, then throw within just the onions and garlic. Cook, stirring, till the onions are gentle and evenly browned, accurately 3 or 4 minutes. Sprinkle in just the curry powder and stir for a second or 2 to brighten its taste.
